Sam Fox, a defining figure in American hospitality whose work has shaped some of the country’s most recognized dining and lifestyle destinations, including The Global Ambassador and The Twelve Thirty Club, will bring Théa Mediterranean Rooftop to Dallas in early 2027, introducing the Phoenix-born restaurant to the new mixed-use development Knox Street, next to the iconic Katy Trail.

Named for the Greek goddess of light, Théa has been recognized among the world’s best hotel restaurants since opening atop The Global Ambassador in December 2023. The Phoenix original is known for its sweeping views, Mediterranean coastal spirit and a style of rooftop dining that feels bright, layered and transportive. Théa has become one of Arizona’s most sought-after reservations — a defining destination that has come to anchor the city’s social scene.

Rooted in the rhythm of the Mediterranean, where afternoons stretch into evening, the menu moves with ease from vibrant mezze to house-made pastas and bold, shareable plates, each dish designed to be passed around the table. A standout is the Goddess of All Dips, a generous spread of whipped ricotta, baba ghanoush, muhammara, tzatziki, kopanisti and hummus, served with bazlama, pita and crudités. Favorites continue with Spaghetti alla Nerano with zucchini, parmesan and beurre monté, alongside the mixed grill with truffle filet, chicken souvlaki, lamb chops and charred vegetables with chermoula and tzatziki. In Dallas, Théa builds on its Phoenix roots with the addition of a new, health-forward Mediterranean lunch experience, offering a flexible, polished setting for everything from quick weekday lunches to long, sunlit afternoons along the Katy Trail.

Théa’s cocktail program is rooted in fresh, house-made ingredients and a balance of classic technique and unexpected nuance. One standout: The Spritz Parade, a trio of options featuring the Dirty Spritz, Parisian Spritz and Aperol Spritz. The bar’s extensive rosé collection adds its own personality, including Fox’s go-to sipper, RUMOR from Provence. As day moves into dusk, spritzes, rosé and electric DJ sets help define the atmosphere that has made Théa one of the country’s most talked-about rooftop experiences.

Amid the surge of attention surrounding Knox Street’s transformative new mixed-use block, the Dallas location will build on that identity with a stunning two-story layout. Fox has tapped the globally recognized interior design firm Charles & Co. to lead the interiors. With studios in New York, Northern Italy and London, the highly acclaimed firm has earned a place on Architectural Digest’s Top 100 list every year since 2019. Théa Dallas will span approximately 8,600 square feet indoors and 3,000 square feet outdoors with a patio overlooking the Katy Trail. Guests will enter at ground level for casual daytime dining before moving upstairs to the main restaurant, which will feature indoor and outdoor bars, a terrace and a live-action kitchen. 

Théa is part of Author & Edit Hospitality, Sam Fox’s growing collection of hotels and restaurants that includes The Global Ambassador in Phoenix and The Twelve Thirty Club in Nashville, with a second location rising inside one of Austin’s most historically significant buildings and opening in late 2027. Théa Mediterranean Rooftop Dallas is expected to open in early 2027.
